Why do the essentials have a warning for external use only?

The FDA classifies aromatherapy products as cosmetics, not something we'd consume. The American Herbal Product Association also requires this warning to be compliant with them. While essential oils are found in edible plants, the concentration of oil is miniscule. Consuming essential oils without guidance can lead to tissue damage, medication interaction, worsening of health conditions. 

How do I know this is a pure oil?

The label states what's in the bottle. Diluted oils like the roll-on bottles have an ingredient declaration showing the  carrier oil, the essential oils, tocopherol (vitamin E). In most situations the MCGS is attached to essential oil profiles so you can see what makes up the oil. Remember that essential oil are made of a an assortment of chemical that contribute to the aroma and their effects.

What can't I use the directly on my skin?

Essentials are extremely concentrated extracts of plant matter and some of the various chemicals found in them can lead to sensitization and sensitives that sometimes happen immediately while other can happen suddenly after repeated use. Diluting the essential oil reduced the chance of irritation while maintaining the benefits. More is not necessarily better.
